Minted peas
This flavour combination might very well be the most famous to have come out of England. Delicious with lamb or poultry!

Ingredients

fresh peas, blanched |

butter |

sprigs |
fresh mint, finely chopped |
As needed: |

Preparation method
- Warm up the peas in the butter and a little water.
- Finely chop the mint.
- Mix the mint with the hot peas and season with salt and pepper.
- Serve immediately.
Serving suggestions
- With a dish with lamb or poultry.
- As a base for a pea purée.
- Tip: make rolls of minted butter to be able to process large amounts.
