This butter is blended with a Japanese fermented soya bean paste called miso. The darker the miso, the richer the flavour.

Preparation method

  • Allow the butter to come up to room temperature.
  • Beat the butter in a planetary mixer until white.
  • Stir in the miso until airy.
  • Season to taste with a little salt and pepper. 

Serving suggestions

  • As a flavour enhancer for carrot purée.
  • For braising vegetables.
  • As a garnish or sauce on pan-fried meat or fish.
