Miso is a wonderful flavour enhancer from Japanese cuisine that adds a lot of power to dishes. It is a fermented paste made from soy beans and rice with salt and koji. It combines particularly well with mayonnaise. This recipe makes 5 decilitres of mayonnaise.

sushi vinegar

Preparation method

  • Mix all the ingredients and season to taste with wasabi and sushi vinegar.

Serving suggestions

  • As part of a starter, e.g. with Asian-style stir-fried mussels.
  • Goes well with tuna, mackerel and pork belly.
