Preparation method

  • Allow the butter to come up to room temperature.
  • Beat the butter in a planetary mixer until white.
  • Cut the rind from the lemon.
  • Remove the white part from the rind and then finely slice the rind.
  • Mix the finely sliced rind with the butter and season with salt and pepper.
  • Roll the butter in plastic film or spoon into a mould or piping bag and store in the refrigerator. 

Serving suggestions

  • As a flavour enhancer in potato and vegetable purée.
  • For preparing couscous.
  • As a flavour enhancer in vegetable dishes.
  • As a garnish or sauce on pan-fried meat or fish.
