Ingredients

Preparation method

  • Cut the mushrooms into thin slices and fry gently.
  • Finely chop the shallot and gently fry in the butter.
  • Add the flour and stir to create a roux.
  • Warm the roux on a low heat until it is cooked.
  • Add the cooled stock in two parts and bring to the boil whilst stirring.
  • Add the cream and bring the ragout back to the boil.
  • Add the mushrooms, the chives, and the mustard, and season the ragout to taste with salt and pepper.

Serving suggestions

  • Serve the ragout with a classic puff pastry pie.
  • Serve as part of a vegetarian menu.
  • Experiment with different types of mushrooms.
