parsley, finely chopped

Preparation method

  • Using a dinner knife, remove the mussels from their shells.
  • Put the raw mussels on a drying cloth.
  • Make a dough from the flour, butter and egg.
  • Mix in the cheese and parsley.
  • Roll out the dough in a thin sheet and punch out small circles.
  • Place the mussel in the shell and cover with the dough.
  • Bake in a 170°C oven until golden brown. 

Serving suggestions

  • Use further as part of a fish dish or amuse-bouche, e.g. with cauliflower mayonnaise.
  • With a saffron-mustard soup.
  • As a cocktail snack.
