Ingredients

butter, unsalted

g

mustard

50

ml

vinegar

Preparation method

  • Allow the butter to come up to room temperature.
  • Weigh all the other ingredients.
  • Mix finely in a blender.
  • Increase the blender speed until the ingredients are fully emulsified.
  • Make rolls of the butter using a few layers of plastic film.
  • Store in the refrigerator until use. 

Serving suggestions

  • To finish off a beurre blanc.
  • To season potato mousseline.
