mustard grains



apple juice



shallot brunoise



Granny Smith apple, finely diced



chives, finely chopped



salt and pepper



olive oil



white balsamic vinegar

Preparation method

  • Cook the mustard seeds in the apple juice until soft.
  • Pass the mixture through a sieve.
  • Add the shallot brunoise and diced apple.
  • Season to taste with salt, pepper, white balsamic vinegar, and olive oil.

Serving suggestions

  • As part of a composition with e.g. beef, apple and celeriac components.
