Noodle soup with short rib

This component is prepared with the thick Japanese udon noodles, but is also delicious if made with buckwheat soba noodles. You can create many different varieties of this dish.

red chilli pepper, finely chopped

Preparation method

  • Bring the short ribs to the boil in the water together with the kombu, bonito flakes, red chilli pepper, mirin, soy sauce, and daikon and cook until done.
  • Skim off the foam regularly.
  • Once the short ribs are cooked, add the udon noodles and the soft-boiled egg.
  • Garnish with the finely chopped spring onion and red chilli pepper.

Serving suggestions

  • Pork belly makes a delicious addition to this soup as well.
  • Add generous amounts of fresh green herbs to the soup.
