Nougatine

Nougatine makes the perfect pie crust due to the sturdy caramel and nut combination. Create small pieces of nougatine for decoration on a cake by finely grinding the nougatine in a mixer.

Preparation method

  • Place the almonds in an oven preheated to180°C for 15-20 minutes.
  • Cook the fondant and the glucose syrup until it lightly starts to caramelise and then add the almonds.
  • Once the mixture reaches the desired colour, pour the nougatine onto the work surface or keep on a baking try in the oven at 140°C.

Serving suggestions

  • As a pie crust or as decoration on a cake.
  • As a filling in a bonbon.
