Ingredients

olives, any type

Parmesan cheese, grated

Preparation method

  • Make a dough from the butter, sugar, ground almonds and eggs.
  • Finely chop the olives in a blender or food processor.
  • Fold the parmesan cheese and chopped olives into the dough.
  • Transfer the mixture into a piping bag and fill into the desired moulds (in this case, madeleine moulds).
  • Bake for approximately 20 minutes at 180oC.

Serving suggestions

  • As a side with savoury dishes, e.g. with lentils and anchovies.
  • As an amuse-bouche or cocktail snack.
