Ingredients

500

ml

Hojiblanca olive oil

1

 

chilli pepper, in rings

5

cloves

garlic, crushed

10

sprig of

thyme

5

sprigs of

rosemary

100

g

preserved lemon peel

250

g

black Kalamata olives, stoned

 

 

coarse sea salt and black pepper

Preparation method

  • Place the olive oil in a pan and warm on medium heat.
  • Add the chilli pepper, garlic, thyme, rosemary, and lemon peel.
  • Season to taste with salt and pepper.
  • Continue to cook gently for four to five minutes.
  • Remove the pan from the heat.
  • Leave the oil to cool down and then pour it over the olives.
  • Marinate the olives in the oil for at least 24 hours.

Serving suggestions

  • As a cocktail snack.
  • As a component in a salad.
