Preparation method

  • Heat up a frying pan (or plancha) until very hot.
  • Place the onions in the pan cut side down and char until the surface is completely black.
  • Set up a pressure cooker and cook the onions with the water on full pressure for twenty minutes.
  • Strain the liquid and set aside.

Serving suggestions

  • As part of a composition, e.g. with lobster components, tomato powder, tomato chip and blood sausage purée.
  • Delicious with components of duck, mandarin, and star anise.
  • Pairs perfectly with tortellini, Jerusalem artichoke, and old cheese.
