Preparation method

  • Beat the eggs with 250g sugar and the zest of three oranges until light and fluffy.
  • Melt the butter and stir into the eggs.
  • Then add the flour and baking powder, the couscous, and then the juice of one orange in succession.
  • Line a cake tin with baking paper and pour in the batter.
  • Bake the cake for 30 minutes at 180°C.
  • Make a syrup from 100g of sugar and the juice of two oranges.
  • Remove the cake from the oven and place on a cooling rack. Brush the cake with the syrup.

Serving suggestions

  • As a basis for a lovely cake filled with orange marmalade and white chocolate ganache, and piped with Italian meringue.
  • Cut into thin slices and used as a bottom for a bavaroise or parfait composition.
