Oriental plum jam

A delicious savoury plum jam with Asian flavour accents.

Recipe makes 420 grams.

Ingredients

  • 350 plum
  • 50 onion, finely diced
  • clove garlic, finely chopped
  • tsp red chilli pepper
  • 20 vinegar
  • tbsp brown sugar
  • 1/2 tsp ground ginger
  •  as needed olive oil

Preparation method

  • Cut the plums in half lengthways and remove the stones.
  • Cut into large pieces.
  • Gently fry the onion with the garlic and chilli pepper in the olive oil.
  • Add the plums and fry briefly.
  • Deglaze with the vinegar.
  • Stir in the treacle sugar.
  • Add all the ingredients and bring to a boil in a saucepan over a low heat, stirring constantly.
  • Puree the mixture for a smoother jam if desired.
  • Press into a container and allow to cool. Store the plum jam in the refrigerator.

Serving suggestions

  • To accompany fried duck breast, roasted belly pork, or pigeon, for example.
  • As an accompaniment to cold meats.
  • As a component in a composition with foie gras.
