Oriental plum jam
A delicious savoury plum jam with Asian flavour accents.
Recipe makes 420 grams.

Ingredients
- 350 g plum
- 50 g onion, finely diced
- 1 clove garlic, finely chopped
- 1 tsp red chilli pepper
- 20 g vinegar
- 1 tbsp brown sugar
- 1/2 tsp ground ginger
- as needed olive oil
Preparation method
- Cut the plums in half lengthways and remove the stones.
- Cut into large pieces.
- Gently fry the onion with the garlic and chilli pepper in the olive oil.
- Add the plums and fry briefly.
- Deglaze with the vinegar.
- Stir in the treacle sugar.
- Add all the ingredients and bring to a boil in a saucepan over a low heat, stirring constantly.
- Puree the mixture for a smoother jam if desired.
- Press into a container and allow to cool. Store the plum jam in the refrigerator.
Serving suggestions
- To accompany fried duck breast, roasted belly pork, or pigeon, for example.
- As an accompaniment to cold meats.
- As a component in a composition with foie gras.
