Ingredients

black beans, soaked

white beans (haricot beans), soaked

edamame beans, fresh or frozen

spring onions, cut into narrow rings

black Spanish radish, brunoise

white miso

ginger root, grated

tbsp

Japanese soy sauce

mirin

sunflower oil

sesame oil

As needed:

 

salt and pepper

Preparation method

  • Rinse the black and white beans.
  • Cook both types of beans in separate pans in plenty of water, skimming off the foam regularly.
  • Drain the boiled beans and allow to cool.
  • Pod the edamame beans and blanch them for three minutes. Then cool in iced water.
  • For the dressing, mix the miso, ginger root, soy sauce, mirin, and the two oils.
  • Put all the ingredients together in a bowl and mix well.
  • Season with salt and pepper.

Serving suggestions

  • As a stand-alone salad.
  • As a vegetable and carbohydrate accompaniment to Oriental dishes.
