A simple but delicious way to give plums great flavour! Can be used both on its own and as mise en place for further preparation.

Recipe makes 600 grams.

white wine, dry

granulated sugar

cardamom pods

orange, rinds

Preparation method

  • Preheat the oven to 180°C.
  • Arrange the plums next to each other in an oven dish.
  • Boil the remaining ingredients together until the sugar has dissolved.
  • Pour this over the plums and cover with aluminium foil.
  • Put in the oven and bake for 30 minutes.
  • Check they are done using a skewer or the tip of a knife. The plum should have a little give but not be squishy.

Serving suggestions

  • As a garnish in a composition with components of vanilla, orange, and brandy.
  • As part of an amuse-bouche, for instance in combination with components of celeriac, onion, beetroot, or chicory.
  • As a component in a warm composition, for example with scorzonera (black salsify), fennel, red cabbage, or chicory.
  • As a basis for a plum tart.
