Oven-grilled octopus with thyme, rosemary, and garlic
The whole octopus is prepared in the oven for this preparation. Serve in the oven dish for a rustic presentation or portion to use in a composition.

Preparation method
- Clean the octopus (see component: Cleaning octopus).
- Clean the onions and cut into quarters.
- Place the octopus in an oven dish.
- Drizzle with olive oil.
- Add the other ingredients and season to taste with salt and pepper.
- Cover the oven dish with aluminium foil.
- Cook the octopus in an oven preheated to 180°C for approximately 1½ hours.
- Allow the octopus to cool a little under the aluminium foil.
Serving suggestions
- Delicious in a composition with black rice, tomato, and fennel.
- As part of a composition with components of leek, potato, and samphire.
- Serve as part of a selection of tapas.
