Ingredients

oxheart cabbage leaves

100

ml

sushi vinegar

Preparation method

  • Use a cutter to press neat circles out of the cabbage leaves and place these in a vacuum bag with the sushi vinegar.
  • Pull vacuum. This allows the sushi vinegar to directly infuse the cabbage.
  • Set aside to infuse for at least 4 hours.

Serving suggestions

  • As a garnish in salads.
  • As part of a starter.
  • As a component of a vegetable dish
