Preparation method

  • Clean the oxheart cabbage and remove the leaves.
  • Cut away the leaf veins.
  • Briefly blanch the oxheart cabbage in water to which salt has been added.
  • Immediately cool in iced water.
  • Pat the leaves dry and cut into neat strips.
  • Julienne the cut-offs and season with salt and pepper.
  • Place the leaves onto cling film and season with salt and pepper.
  • Place the cabbage strips on top and roll it up tightly.
  • Slice neatly and refrigerate until ready to use.
  • Warm up in a little butter just before serving.

Serving suggestions

  • As part of a starter or amuse-bouche.
  • As a component of a vegetable dish
