The krupuk is a traditional Indonesian cracker made tapioca flour and prawn. The crackers of this recipe have such a strong oyster flavour that you will think you are eating a crispy-fried oyster.

Preparation method

  • Blend the oyster and the oyster liquor in the thermo blender until fine.
  • Season to taste with salt.
  • Add the tapioca and the silver powder and blend in the thermo blender for 30 minutes at 90°C.
  • Spread the mass on silicone mats and let dry under a heat lamp.
  • Fry the dried oyster crackers until they puff up nicely.
  • Grind the dried wakame in a blender until it becomes a fine powder, and sprinkle over the krupuk.

Serving suggestions

  • As a component of an aperitif. Consider champagne grapes with oyster krupuk as a variant on oysters with champagne.
  • As a garnish to an oriental oyster salad.
