Preparation method

  • Carefully remove the fillets from the bone using a very sharp knife. 
  • Cut the fillets into equally sized portions and season lightly with salt.
  • Set aside for a few minutes and then pat dry well with kitchen towel.
  • Gently fry the halibut in the olive oil.
  • Add a cube of butter and continue to gently fry the fillets in the pan.
  • Regularly baste the halibut with the sizzling butter. This glazes the fish with a beautiful nutty flavoured layer.
  • Season to taste with lemon juice if desired.

Serving suggestions

  • As an entremets or main dish with components of potato, artichoke, asparagus, celery, citrus, courgette, green herbs, mushrooms, fennel, chicory, and carrots.
