all-purpose flour

whole milk

egg yolk

clarified butter

Preparation method

  • Beat half of the milk with the flour to create a smooth batter.
  • Add the eggs and the egg yolk.
  • Slowly add the remaining milk and beat until you have a smooth batter.
  • Add the salt and the clarified butter to finish the batter.
  • Fry the pancakes in a big frying pan in butter or oil.

Serving suggestions

  • As a meal, with syrup or icing sugar.
