Preparation method

  • Fry the panko in the charcoal oil until golden brown.
  • Combine with the maltodextrin and season with salt and pepper.
  • Store in a well-sealed, airtight container.

Serving suggestions

  • To add a crunchy texture to starters, e.g. a shrimp cocktail in the surf.
  • As a topping for an amuse-bouche, e.g. with cauliflower mousse.
  • As crunchy layer on a fried fish fillet.
