This is a classic Irish sauce. By first infusing the milk with the parsley, the flavour of the sauce is intensified.

Ingredients

flat-leaf parsley

 

 

salt and pepper

Preparation method

  • Add the parsley to the milk and infuse in the refrigerator overnight.
  • Pour the milk through a sieve and set aside the parsley.
  • Use the flour and butter to make a roux.
  • Add the infused milk to the roux little by little whilst stirring continuously.
  • Briefly continue cooking the sauce, so that it thickens.
  • Chop the soaked parsley and stir through the sauce.
  • Season to taste with salt and pepper.

Serving suggestions

  • Serve with roast chicken or pork rib roast.
  • Use the sauce in a lasagne or as a creamy pasta sauce.
