Preparation method

  • Bring the passion fruit juice, sugar, and salt to the boil, reduce to half, and set aside to cool.
  • Emulsify with the olive oil.
  • Spoon the seeds from the passion fruit and mix with the dressing. 

Serving suggestions

  • You can use this dressing for dishes where you would usually use the acidity of lemon, such as with oysters and fatty fish.
