Preparation method

  • Make the mayonnaise by blending the defrosted peas, egg yolk, lemon juice, mustard and salt.
  • Use in a dish with components of salmon, radish, and avocado.
  • Mount with the olive oil.

Serving suggestions

  • In a summery version of traditional thick pea soup with pickled celeriac, leek confit with vadouvan, kombu dashi, and Souchong tea, and roast pork belly.
  • As a dip for crudités.
