Peanut butter with caramelised banana and lime
An unusual variation on ‘ordinary’ peanut butter. Banana makes an excellent combination with peanut, and the peanut butter and banana sandwich is, for many people, a classic.

Preparation method
- Dry roast the peanuts in a 150°C oven for 15 minutes. Make sure they are golden brown.
- In a blender, grind the peanuts and salt with half of the oil until fine.
- How smooth your peanut butter will be is up to you.
- Slice the banana.
- Caramelise the sugar in the pan and then add the banana slices. Coat the banana slices all around and set aside to cool.
- Add the banana slices to the peanut butter and blend until smooth.
- Season with the lime zest and juice.
Serving suggestions
- As a component of a breakfast or breakfast buffet.
- As a component in a sweet sandwich (cold or grilled).
- As a component in a dessert, e.g. with banana, coconut and peanut.
