Preparation method

  • Boil the cane sugar and water, add the cinnamon sticks, and leave to infuse for half an hour on a very low heat. Set aside to cool completely.
  • Mix with the Gold Strike.
  • Cut the pears into neat cubes and place together with the Gold Strike syrup in a low bowl that fits in the vacuum machine.
  • Pull vacuum twice in the vacuum machine. The vacuum process first causes the structure of the pear to open up before the pear is completely impregnated with the Gold Strike syrup at the end of the process.
  • Allow to infuse in the refrigerator for at least 4 hours until the pear is completely translucent.

Serving suggestions

  • Serve as a garnish with a pear and chocolate dessert.
  • Or as here as an aperitif on shaved ice.
