Pear relish

A relish is a British side dish of Indian origin. It is closely related to chutney but has a spicier flavour. Relish is, in fact, a sweet and sour purée made from fruits, vegetables, or a combination of the two, to which sour ingredients like cocktail onions and gherkins are added, alongside spices. The entire mixture is cooked with sugar and vinegar. Unlike a chutney or ketchup, the individual ingredients of a relish are still recognisable. Pear is an ideal ingredient to use in a relish.

Preparation method

  • Finely dice the pear, onion, and sweet peppers.
  • Put the sugar, white wine vinegar, and all the spices together in a pan.
  • Leave to infuse for 10 minutes before adding the fruit and vegetables.
  • Boil the mixture for 5 minutes and then leave it to cool down to room temperature.

Serving suggestions

  • As an accompaniment to roasted meat such as spare ribs and spicy chicken.
  • As an accompaniment to an Indian or Thai curry.
  • As part of a starter.
