Ingredients

Preparation method

  • Heat the red wine, red port, and sugar until the sugar is dissolved.
  • Add the spices, and juice and zest of the lemon and orange, and leave to infuse for a short while.
  • Peel the pears and add to the mixture.
  • Gently poach until done.
  • Allow to cool and vacuum seal them with the liquid. Not only will they last longer but the pears will be strongly infused with the liquid.

Serving suggestions

  • As part of a main dish, e.g. with game, such as pigeon, and potato components.
  • As part of a dessert, e.g. with light cream and vanilla ice cream.
