Preparation method

  • Leave the coffee beans to infuse in the jus on a low heat for around four hours. This will allow the coffee flavour to gradually infuse in the jus without leaving a nasty bitter taste.
  • Pour the jus through a passing cloth to remove any remnants from the beans.
  • Mount with butter just before serving.

Serving suggestions

  • In combination with poultry.
