Preparation method
- Bring the white wine and the water to the boil with all the spices and the lemon and lime zest. Leave to infuse next to the heat for half an hour.
- Method 1: Peel the pineapple and cut into quarters. Remove the core and cut the pineapple into thin slices. Poach the pineapple for a few minutes just before serving.
- Method 2: Peel the pineapple and cut into quarters. Remove the core and poach the pineapple on a low heat for about 45 minutes. Leave to cool down in the liquid and cut into thin slices just before serving.
