Ingredients

Oloroso sherry

g

plum coulis

whipping cream

egg yolk, pasteurised

sugar

Cortina or other emulsifier

Preparation method

  • Bring the coulis to the boil with the sherry.
  • Pour in the cream and bring back to the boil.
  • Lightly beat the egg yolks with the sugar.
  • Pour the plum mass into the egg yolk mix, stirring constantly.
  • Transfer to a pan and cook over a low heat.
  • Add the Cortina and mix using a hand-held blender.
  • Leave to rest for 24 hours.
  • Turn into ice cream using an ice-cream machine.

Serving suggestions

  • In a composition with components of vanilla, dark chocolate, hazelnuts, and blueberries.
  • In a composition with components of beetroot and gorgonzola.
  • As an accompaniment to a cheese board.
