Preparation method

  • Boil the water and the sugar to form a sugar syrup.
  • Leave to steep with the rosemary.
  • Cut the plums lengthways and remove the stones.
  • Arrange neatly in a vacuum bag and pour in the rosemary syrup.
  • Pull vacuum and place in a sous vide system at exactly 60°C.
  • Leave in the water for 45 minutes.
  • Allow to cool in iced water and keep in the refrigerator.

Serving suggestions

  • In a dessert composition with strawberry, vanilla, and crumble, for example.
  • In a dessert composition with coffee, almond, and caramel, for example.
