Plum marinated in red wine

Plums combine perfectly with red wine, cinnamon, and cloves. This combination is reminiscent of mulled wine and is a perfect way to conserve plums.

Preparation method

  • Skin the plums after immersing them in boiling water.
  • Heat the wine, cloves, and cinnamon sticks to just below boiling point.
  • Dissolve the sugar in the wine.
  • Add the plums, complete with stone, and warm slowly on a low heat until just below boiling point.
  • Transfer to a sterilised jar and seal.
  • Leave to infuse in the refrigerator for a week.

Serving suggestions

  • As a garnish for a cheese board.
  • As a component in a dish with pigeon, beetroot, chocolate, or onion.
  • As part of a dish with a beef or game stew, celeriac, Jerusalem artichoke, or shallot.
