Plum marinated in red wine
Plums combine perfectly with red wine, cinnamon, and cloves. This combination is reminiscent of mulled wine and is a perfect way to conserve plums.

Preparation method
- Skin the plums after immersing them in boiling water.
- Heat the wine, cloves, and cinnamon sticks to just below boiling point.
- Dissolve the sugar in the wine.
- Add the plums, complete with stone, and warm slowly on a low heat until just below boiling point.
- Transfer to a sterilised jar and seal.
- Leave to infuse in the refrigerator for a week.
Serving suggestions
- As a garnish for a cheese board.
- As a component in a dish with pigeon, beetroot, chocolate, or onion.
- As part of a dish with a beef or game stew, celeriac, Jerusalem artichoke, or shallot.
