Ingredients

Preparation method

  • Cut the plums in half and remove the stones.
  • Bring the water and white wine to the boil.
  • Add the black tea and leave to infuse for ten minutes.
  • Strain the tea leaves from the liquid and stir in the sugar until it has dissolved.
  • Poach the plums until they are soft but still have some bite.
  • Set aside to cool in the liquid.
  • Store the plums cold in the liquid.

Serving suggestions

  • In a dessert composition with vanilla or spiced ice cream.
  • In a composition with components of foie gras and almonds.
