Ingredients

peeled peaches

white wine

fresh lemon balm

Preparation method

  • Cut the peeled peaches lengthways through to the stone and twist the two halves in opposite directions.
  • Remove the stones and roughly chop the peaches.
  • Make a stock by boiling together the water, sugar, white wine, lemon balm, cinnamon sticks, and cloves.
  • Leave to infuse next to the heat for half an hour.
  • Remove the lemon balm, cinnamon, and cloves and add the chopped peaches.
  • Poach the peaches until just done and purée with a hand-held blender.
  • Pass the soup through a sieve and then cool.
  • Season with the lime zest and juice.

Serving suggestions

  • As a basis for a dessert, e.g. with yoghurt and strawberry components.
  • As a basis for a dessert, e.g. with raspberry granité and mascarpone. 
  • Perfect in a dessert with white chocolat, olive oil and almonds.
