Pears go extremely well in flavour combinations containing spices. For this component, we poach Conference pears in a light syrup made from wine and spices. You could use the poached pear in both savoury dishes and desserts.

Preparation method

  • Heat all the ingredients except for the pears in a large pan.
  • Peel the pears and slowly poach them in the syrup.
  • Allow to cool and vacuum seal them with the liquid. Not only will they last longer but the pears will be strongly infused with the liquid.

Serving suggestions

  • As part of a main dish with game or poultry.
  • As part of a dessert, e.g. in a classic composition with a chocolate syrup and vanilla ice cream.
