Ingredients

star anise

Preparation method

  • Clean the pork loin by removing any membranes or fat.
  • Place all the ingredients in a vacuum bag and pull vacuum.
  • Place the bag in a Roner or other hot water bath at 60°C.
  • Leave to cook for five hours. 

Serving suggestions

  • Serve in combination with caramelised onion and various potato components.
  • Perfect for gratineeing with a herb crust or ‘viennoise’.
