This is a variant of the classic beef rib roast. A whole rack of pork ribs roasted and finished with potato crisps, lime, and fresh herbs.

Preparation method

  • Finely chop all the herbs and mix together.
  • Rub the meat with salt and fry on both sides in a pan with clarified butter until it is a nice golden-brown colour.
  • Continue to cook on the Big Green Egg until the core temperature reaches 57°C.
  • Leave the meat to rest and season with black pepper.
  • Garnish the meat side with a mixture of the herbs, potato crisps, and lemon zest.
  • Slice at the table or show it to the guests first before cutting it in the kitchen.

Serving suggestions

  • As a main course with components of potato, fennel, carrot, or pumpkin.
