Ingredients

soya sauce

sugar

red chilli pepper

ginger

sesame oil

chilli oil of your choice

spring onion, finely chopped

Preparation method

  • Place the meat in a pan of salted boiling water.
  • Bring to the boil again, cover the pan, and leave the meat to gently poach for 40 to 50 minutes.
  • Turn off the heat and leave the meat to cool down in the cooking liquid for at least four hours with the pan uncovered.
  • In the meantime, mix all the other ingredients together to make the sauce.
  • Cut the cold meat into slices and pour over the sauce. 

Serving suggestions

  • As a component in a starter, e.g. with sweet-and-sour cucumber.
  • As a component in a salad, e.g. with a contemporary version of a Russian salad.
