Ingredients

sweet soya sauce (kecap manis)

Preparation method

  • Clean the garlic and the shallots.
  • Place in a food processor with the rest of the dry ingredients.
  • Blend to a coarse paste.
  • Gradually add the sweet soya sauce and oil whilst blending until a smooth paste is formed.
  • Season to taste with salt.
  • Store the marinade in the refrigerator until use.
  • Cover the meat with the marinade and refrigerate for at least twelve hours. 

Serving suggestions

  • Use the marinade to marinate pork fillet or loin before grilling over an open fire.
  • Marinate and cook pork neck in a sous vide system before grilling on a barbecue.
