Potato cylinder

Simple, yet elegant garnish for all sorts of dishes. A little practise is all that's needed to create an entire batch of these. In addition, this garnish can easily be prepared mise en place and can be kept for a long time if stored dry.

Preparation method

  • Peel the potatoes and use a spiral vegetable cutter to cut long potato ribbons.
  • Cover a stainless steel ring with a strip of greased baking paper.
  • Wind the potato ribbons around the covered cylinder.
  • Cover with a second strip of baking paper and bind with kitchen string.
  • Deep-fry the spirals for approx. 5 minutes at 170°C.
  • Store in an air-tight container with silicone granules.

OR

  • Peel the potatoes and use a spiral vegetable cutter to cut long potato ribbons.
  • Lay the ribbons tightly against one another on a silicone baking sheet and steam for 2 minutes in the steamer until cooked.
  • Cover a steel cylinder with greaseproof paper and cover with the steamed potato.
  • Deep-fry the spirals for approx. 5 minutes at 170°C.
  • Store in an air-tight container with silicone granules.

Serving suggestions

  • As a garnish for a wide variety of dishes.
  • Serve as crunchy cannelloni filled with ingredients such as goat's cheese, aubergine or roasted onion.
