Preparation method
- Peel the potatoes and cut into equal sized pieces.
- Boil the potatoes until tender and mash them.
- Mix the mashed potatoes with the butter and milk
- Season with salt and nutmeg to taste.
- Leave the mash to cool, then mix with the eggs.
- Pipe the mixture into thin straw shapes and dry in the oven at 135°C until crispy.
Serving suggestions
- As a snack with an aperitif.
- As a crunchy garnish.
- Vary by using different spices to tailor the component to various compositions.
