Ingredients

floury potatoes

butter

milk

eggs

ground nutmeg

Preparation method

  • Boil the potatoes until tender and mash them.
  • Mix the mashed potatoes with the butter and milk and season with salt and nutmeg to taste.
  • Leave the mash to cool, then mix with the eggs.
  • Pipe the mixture into thin straw shapes and dry in the oven at 135°C until crispy.

Serving suggestions

  • As a snack with an aperitif.
  • As a crunchy garnish.
  • Vary by using different spices to tailor the component to various compositions.
