Preparation method

  • Clean the anchovies by removing the intestines, heads, and tails.
  • Rinse the fillets under running cold water and place on sheets of kitchen towel to dry.
  • Place them in a preserving jar, layer by layer. Start each layer with salt, add the anchovies and finish the final layer with salt (pressing the layers carefully).
  • Place the filled pot in the refrigerator for at least two weeks.

Serving suggestions

  • As a component in a salad, for instance with fennel, beetroot, and apple.
  • As a flavour enhancer.
