Ingredients

Preparation method

  • Combine all ingredients except the radish and reduce to a sweet-and-sour brine.
  • Allow to cool entirely.
  • Wash the radish well.
  • Slice the radish lengthwise, peel and all, into 5cm pieces.
  • On the slicer, slice the pieces lengthwise into 1mm-thick slices.
  • Trim the sides to remove the skin.
  • Then cut the slices into fine julienne and marinate in the sweet-and-sour brine.

Serving suggestions

  • As a component in an amuse-bouche; roll up the spaghetti and top with different types of cress and basil mayonnaise.
  • As a component of a composition with of leek, tomato, salmon, sweet pepper, or cucumber components.
  • As a side dish.
