Preparation method

  • Run the rammenas through the juicer and season with sushi vinegar and salt.
  • Thicken with xanthan gum (2g per litre).

Serving suggestions

  • As a basis for a vinaigrette or dressing.
  • Pour out at the table, e.g. with a starter of crab, lemon, and apple.
