Raspberry toffee

The cream in this component provides for a warm taste sensation. The added salt gives the dish a more savoury appeal. In a dessert this will cause multiple taste buds to be stimulated, intensifying the experience. In this recipe a new flavour will be added by including raspberry coulis. If desired, this recipe can be made with any other fruit coulis.

Preparation method

  • Bring all the ingredients to the boil, stirring regularly.
  • Set to cool and pour into a squeeze bottle.

Serving suggestions

  • As a sauce to go with a dessert.
  • Delicious in combination with strawberries and yoghurt ice cream.
  • Delicious in combination with a yoghurt and honey bavarois.
