Raw green asparagus salad

Green asparagus are fine to eat raw if shaved very thinly. The sweet and sour liquid ‘cooks’ the asparagus.

Ingredients

olive oil

Preparation method

  • Wash the asparagus and remove the woody ends.
  • Use a food cutter or mandolin to shave the asparagus into wafer thin slices.
  • Sprinkle with salt and let stand for one minute.
  • Season with olive oil and lemon juice, and black pepper to taste.
  • Mix just before serving with the chopped herbs and garnish with the flowers.

Serving suggestions

  • As a basic ingredient in a salad, e.g. with Parma ham and Parmesan cheese curls.
  • As a basic ingredient in a salad, e.g. with poached quail eggs and marinated salmon.
  • Use in a composition with components of mackerel, tomato, and fennel.
